We cook only from high quality fresh ingredients, which often come from local farmers who supply food of the highest quality with the certified origin. The a la carte menu is supplemented with a gourmet gastro-calendar – offering a seasonal menu connected with a certain season of the year or specific event. Thanks to its uniqueness the TRITON Restaurant was the place where important personalities of political and cultural life used to meet, such as Voskovec and Werich, Vlasta Burian, Emil Arthur Longen, Jaroslav Marvan, Jindřich Plachta, E. E. Kisch, Hugo Haas and many others. Even today thanks to the superb gastronomic enjoyment and friendly and obliging staff famous personalities keep returning to the restaurant.

A good meal is made by a happy chef. Why only “good” and not “excellent” or “best”? When a small child falls over and grazes its knee, you kiss it better and the child continues merrily playing its games. If when climbing I secure my colleague on a rock, we don’t need the best gear in Central Europe. The word “good” means for him “keep climbing, I am here, paying attention to you and securing you, enjoy your trip”. It is the same with my attitude to cooking and food. Enjoy your meal while trusting and knowing that the food is healthy and tasty. Then you can engage in a game and savour your trip, you are in the safe hands of a happy chef.
A good meal can prove itself and please not only its creator, but also the consumer, both in a luxurious restaurant before a visit to a theatre and for Sunday lunch at grandmother’s or even during a quick business lunch in a strange city. I have learned and I am still learning to cook good meals, thanks to the wonderful, and due to their enthusiasm for a good meal, also happy people, in Beroun, Klínovec and Prague as well as in Mexico, Russia, Denmark, Norway, Switzerland and Italy.
